In an effort to find a better snack, something a bit more complex carb, I came up with this.

8 cups popped, popcorn
2 cups Rice Chex cereal
1 cup nuts, broken into pieces.  (I used pecans)
1 cup unsweetened coconut flakes
( I toasted mine first)

1/4 cup coconut oil
2 Tablespoons honey

1/2 teaspoon sea salt
1 teaspoon ground cinnamon

1 cup dark chocolate chips (optional)

Preheat oven to 300°

In a small saucepan heat the oil and the honey, over low heat, just until the honey is melted.  Pour over the mixture, stirring as you pour. 
As soon as you have the mixture stirred, covering all the ingredients with the oil and honey, sprinkle with the salt and cinnamon.

Put in a baking dish and bake at 300° for 15 minutes, stirring every 5 minutes.

Let cool, completely.

Stir in chocolate chips.

Store in air tight container.  Will keep for a good while, not sure how long as mine has only lasted several days so far.

In a very large bowl, combine popcorn, cereal, nuts, coconut
