Snack Mix

In an effort to find a better snack, something a bit more complex carb, I came up with this.

8 cups popped, popcorn
2 cups Rice Chex cereal
1 cup nuts, broken into pieces.  (I used pecans)
1 cup unsweetened coconut flakes
( I toasted mine first)

1/4 cup coconut oil
2 Tablespoons honey

1/2 teaspoon sea salt
1 teaspoon ground cinnamon

1 cup dark chocolate chips (optional)

Preheat oven to 300°

In a small saucepan heat the oil and the honey, over low heat, just until the honey is melted.  Pour over the mixture, stirring as you pour. 
As soon as you have the mixture stirred, covering all the ingredients with the oil and honey, sprinkle with the salt and cinnamon.

Put in a baking dish and bake at 300° for 15 minutes, stirring every 5 minutes.

Let cool, completely.

Stir in chocolate chips.

Store in air tight container.  Will keep for a good while, not sure how long as mine has only lasted several days so far.

Menu Plan Monday – June 25, 2012

I was reading another blog and she was saying how summer has changed “routine” and things are a bit more spontaneous.  Well, I have to agree to a certain degree.  Especially in regards to menu plans.  I changed 3 out of the 7 meals I had planned, but it’s all good and my family was happy.  That’s why it’s a “plan” and we all know how quickly plans can be changed.

Still planning away and trying to keep ahead at least a week on my menus.

This week:

Lasagna

Tuesday:
Oven Roasted Chicken
Potatoes
Carrots

Wednesday;
Salmon Patties
Sides – not sure

Thursday:
Cider Glazed Chicken
Rice
Apple Cider Green Beans

Friday:
Tacos – I will be attempting to fry my own taco shells from store-bought corn tortillas.

Saturday:
Grilled Turkey Tenderloin
Sweet Potatoes
Green Beans

Sunday:
Southwest White Chili

Menu Plan Monday – June 18, 2012

I made a lot of changes on last week’s menu, grilled out a bit more than I’d planned, which was great.  Also, forgot to pull food from the freezer a couple of times too, so had to make last minute changes. 

Monday:
Penne Chicken Italiano
Salad

Tuesday:
Rice Bake

Wednesday:
Cheech’s Manchaca

Thursday:
BBQ Chicken on the Grill
Corn on the cob
Potatoes

Friday:
Meatballs Subs (fingers crossed)
I’m hoping to make sub rolls for this, I will base it off of  this recipe  or I may use this recipe to make them. If I don’t or they are a fail, I will just serve them on a plate.  So then they’ll be meatballs on a plate, instead of subs.

Saturday: 
Pineapple Rum Chicken
Coconut Rice
Carrots

Menu Plan Monday – June 11, 2012

Summer time, is time for grilling!!  I love to grill out and I just got a grill from my niece for $5. Since it wasn’t working we thought it was going to be a $100 fix! Yikes!  But, thankfully we found the part for $12 shipped on Amazon.  Yay!  I will be looking for ideas for cooking entire meals on the grill, so as not to heat up the kitchen, but also to enjoy food from the grill, it’s so tasty.  I would love to hear your favorite thing to cook on the grill, recipe for said favorite is a bonus. 

Menu for the week

Monday:
Pasta Carbonara

Tuesday:
Roast Caribbean Chicken
Sweet Potatoes
 I am going to try to do this on the grill.  I’m thinking of butterflying the chicken so it will cook quicker on the grill.  Not 100% about this yet, I need to do a bit more research as my grilling skills are a bit mediocre.

Wednesday:
Tamale Pie
Tortilla chips

Thursday:
Pineapple Rum Chicken
Coconut Rice
Veggies

Friday:
Meatloaf

Gluten Free No Bake Cookies (nut free)

Well, you may not know this about me, but I LOVE peanut butter.  Just eating out of the jar on a spoon, peanut butter cookies, Reese peanut butter cups, peanut butter pie, no bake cookies…….I could go on and on.  However, about 2 1/2 -3 years ago I started noticing some unpleasant side affects after eating peanut butter all of which I promptly ignored for some time.  Then I decided to “test” my theory and see if it was indeed peanut butter, sadly, it was.  I haven’t eaten peanut butter for over 2 years now and I STILL miss it, even after all this time when I smell I want to eat it. But, I digress… this recipe does not include peanut butter, but it is a no bake cookie.


No Bake Cookies

1/2 cup butter, softened
3/4 cup sucanat OR 2/3 cup sugar
3 Tablespoons unsweetened cocoa powder
1 Tablespoon strong brewed coffee
1 teaspoon vanilla extract
pinch of salt
1 3/4 cup GF rolled oats

Options for coating the cookies:
Cocoa Powder
Toasted Coconut
Powdered Sugar
Ground Nuts (obviously this vetoes the “nut-free designation)

Cream together the butter, sugar, cocoa, coffee, vanilla and salt.  Once creamy and blended well, stir in the oats.  Once all blended I like to let the batter sit for 15-20 minutes to help soften up the oats.  Then I use a scoop and scoop up the cookies and roll into balls.  They will be very sticky – if you are going to coat them, choose a coating and do it right away.  Otherwise you can leave them and they will dry out slightly, only slightly though.  I have also flattened the balls to resemble more of a cookie.

NOTE: If you use the sucanat, let the the batter sit about 15-20 minutes before you add the oats, this will give the sucanat a chance to dissolve, otherwise it’s kind of crunchy.

This made about 2 1/2 dozen 1 inch sized balls
