Menu Plan Monday – 2013 #35

by

I have just come off of a super busy week and headed into another!  I know I have said this so many times this year, but I canNOT believe how fast this year is going.  It seems like the first of September just arrived, but now it’s the last day of the month.

With October knocking on the door I am starting to think about Thanksgiving.  I was thinking of trying to pull together a Thanksgiving e-book to sell.  I know my first completely gluten free Thanksgiving was a huge challenge for me.  I make pretty much the same thing every year so the menu doesn’t really change.  Sometimes I try something new, but it’s just added to the line up.  Anyway, if I’m going to pull that together I need to do it fast, Thanksgiving will be here before we know it.

Today I am making Cranberry Bread (in the cookbook), but another good choice if you want to do some baking is Pumpkin Bread or Amish Style Cinnamon Bread, any of these will warm your house and make it smell delicious.

Menu for the week:

Chili Cheese Mac

Tuesday:
Baked Tacos

Wednesday:
Sweet n Sour Chicken
coconut rice
carrots

Thursday:
Meatballs in Gravy over noodles

Friday:
Bacon Wrapped chicken

Saturday:

Favorite Find Friday Gluten Free – Chips (Tortilla-flavored)

Late July Organic Mild Green Mojo Multigrain Snack Chips

I purchased these for my husband and kids.  I’m not big on spicy stuff.  I am big on non GMO and no additives and this product is big on both!  They were a bit more than I usually spend for snacks though so it will be a treat we enjoy occasionally.  It was $7 for a 24 oz bag at Costco.

I took some time this week to make a couple of logos.  One of them is above. The other I made for Favorite Find Friday.  I also have a board on Pinterest that you can follow me on.  And if you don’t want to miss any new post you can subscribe by email – see right side of blog.

It was a busy week this past week with my oldest, and best helper, gone.  Things went very smoothly and he had a blast at the beach.

I am working hard on getting the recipes together for the next cookbook – Another 101 Gluten Free Recipes.  It’s so hard not to post every new recipe that I make.  This past week I made several new things that were a great success.  I made Vietnamese Pickled Vegetables, Pig’s in a Blanket Muffins, Jalapeno Jelly just to name a few.

Hope you have a great week!

Favorite Find Friday – Gluten Free Chicken Nuggets

by

When my friend, Kelly, told me she had found these at her Costco I was really hoping they had them at my local Costco and I was THRILLED when I found them there.  They are good.  I think they could use a bit more flavor but the texture is good and I cooked them in the toaster oven and they were a little crispy.  It’s not often you can find good, healthy (er) GF fast food.  This is definitely one I will try and keep a bag in the freezer for a quick go to when I need it.

Made from 100% all natural ingredients, our products are allergen-free, produced without the use of artificial ingredients, hormones or preservatives, and are minimally processed. Our Gluten-Free Chicken Nuggets are breaded with a savory blend of rice and corn flour and are certified GF by GFCO.

As we are heading into Fall with cooler weather (hopefully) and pumpkins, apples, cider, leaves changing and falling.  I am looking forward to all of these and more.  I found a great recipe I want to convert to GF Ginger Cookies with Apple Cider Icing.  I will be working on pulling that together.  I think that everyone is getting into the Fall spirit, one of my recipes has been popular on Pinterest Pumpkin Bread.  You can follow the blog on Pinterest here.

We celebrated my (and my mom’s) birthday last week.  The family bought a box cake mix.  I have a recipe to convert a box cake into a fabulously moist and delicious cake.  I will share that recipe soon too.  The icing was amazing also, a yummy buttercream.https://scontent-b-atl.xx.fbcdn.net/hphotos-prn2/1233459_10151829697013498_598526125_n.jpg

Menu Plan Monday – 2013 #32

Happy Labor Day! Not sure how, or if, you celebrate Labor Day.  We usually cookout.  It’s always marked the end of Summer for me.  But the reality is, I’ve lived in the south for so long, that Summer really doesn’t end at the beginning of September.  Maybe in October we’ll start seeing some Fall weather, much later if you’re further south than I am now.  While I do miss the Florida sunshine, palm trees and ocean breezes, I do enjoy the Fall weather and the changing of the leaves.  Either way, no matter where you are I hope you are enjoying a great Labor Day.

Last week was one of the busiest weeks I’ve had in some time.  It was a pretty good week though and had no major upsets which is always a good thing.    This week I am hoping to get out in the yard and do some work.  Need to rake before the leaves start to fall.  Also, want to plan a Fall garden.  I have quite a few seeds already, just need to move some beds around and refresh the soil.

Menu for the week:

Monday:
Burgers

Tuesday:
Chicken Flautas (the beef flautas were a HUGE hit)

Wednesday:
Chicken Fried Steak
Mashed Potatoes
Peas

Thursday:
Pineapple Rum Chicken
Rice
Carrots

Friday:
Sloppy Joes
Sides

Saturday:
Pizza Puffs
Salad

Sunday:
Chili
