Gluten Free Cookie Pie

I saw this post over at Chalkboard Blue and wanted to convert it.  I contacted Michelle and asked about using a homemade crust, because the GF pre-made crusts….well, let’s just say they are a blessing in a pinch, but not too tasty, in my opinion.  She said she had done it with homemade crust.  I contacted her months and months ago, but just now got around to doing it. 

You know how when you make pie and eating it hot out of the oven is the best? Well, this one is better once cooled.  If you do want to eat it warm, try to wait as long as possible otherwise it will be kind of oozy as you’ll see in my pictures. 

Also, since I converted this to gluten free it turned out a bit different than the original, for instance her chocolate chips stayed on bottom and mine rose to the top.  Since never tasting the original I can’t compare, but it was a big winner at my house.

So here’s my take on the recipe with some pictures.

Preheat oven to 325°

1 Pie crust

2 eggs
pinch of salt
1/2 teaspoon vanilla extract

1/2 cup sugar
1/2 cup brown sugar
1/4 cup cornstarch

1 stick butter, slightly softened

2- 3 handfuls Chocolate Chips – I used semi sweet, but would use milk or dark

Make pie crust

Pour chocolate chips into prepared pie crust, cover the bottom

Stir the sugars and cornstarch together and set aside.

In a medium size bowl beat eggs, vanilla and salt until foamy. Add sugar, mix.  Blend in softened butter.

Spread this onto chocolate chips, smooth out.

 

Bake one hour at 325°.

Let cool.  If you cut before cool it will look like this.

This is after it had cooled, completely.

Menu Plan #5 – 2014

I totally skipped blogging last week.  This year has been a pretty crazy one for our family.  Last week was spent recovering from the previous week.  In case you didn’t hear GA was struck by a massive (for the south) ice storm and snow.  Now I know for those of you who live where this is the norm, it is a little laughable, but for us here it was devastating.  We are not prepared, in any way, or this kind of weather.  I have lived in this area for a total of 12 years (not consecutively) and this is only like the 3-4th time it ever even snowed, so this was catastrophic.  Thousands and thousands of people were without electricity from hours to days.  Trees covered in thick layers of ice proved more than these southern trees could handle, destroying countless trees (including an iconic tree) and damaging much property.  As far as I have heard, no one that I know had any major damage or injury, thankfully.  We were blessed to have not lost power at all during this time and took minor damage to exterior property.  I have said it  numerous times but the weather around here has been insane.  We had a major ice storm, two days later an earthquake (yes, that’s right, an earthquake, including follow up tremor) and then few days later weather in the 70’s!! We shall see what the rest of winter holds for us here.


I have a recipe to share for Salted Caramel Rice Krispies Treats, I will try to get that up soon.  I did that for Valentine’s day.  I also made heart pancakes for breakfast that day. That’s fun for any day really, the kids loved it.

Menu Plan #4 – 2014

I have been working on my schedule this past week, school, housework, blogging, seeing family, menu planning, I could go on and on.  Trying to balance everything and get it all done really is next to impossible!  Planning should help, theoretically.  A plan is just that, a plan, plans change, circumstances change and sometimes you have to change, rearrange or ditch the plan altogether.  I’m still working on being more flexible.  Last week was a busy one, again.  It seems like more busy weeks than not lately.  I do have a menu plan through the first week of April ready though, big accomplishment.  I also formulated a new recipe, I think it may need a few tweaks, but hope to share it soon, it’s Key Lime Pie Crazy Cake, spin-off of Chocolate Crazy Cake which is crazy good, as a bonus it’s not only GF, but  Egg Free, Nut Free and easily Dairy Free.

Gluten Free Box Cake Made Better

Typically I make cakes from scratch, now that I have formulated some good tasting cakes.  But, sometimes  you just like to grab a mix and make it quick.  This will bump up the taste and texture a couple notches.  I have no picture for this recipe.


1 15 oz box GF Cake Mix (I used Betty Crocker)

2 Tablespoons Brown Sugar
8 oz vanilla yogurt
1/2 cup light olive oil (or whatever you usually use)
3 eggs
4 teaspoons vanilla

Preheat to 350 degrees
Grease and parchment line pans

Combine sugar, yogurt, oil, eggs and vanilla; mix well.  Add cake mix and beat well.
Divide cake batter into pans – 2 –  8 inch round  pans
Bake 30-40 minutes.

Menu Plan – 2014 #3

We had snow!!  When we moved here in 2010 my kids were so excited for snow, I kept trying to tell them that it doesn’t snow here very often.  Well, it did snow that first January we were here in 2011!  My little kids were expecting snow every winter and this year their expectations were met!  Weird weather though, freezing temps, snow and then two days later up in the high 50’s.  They kids were out there in short sleeves and no jackets.  I was still cold.    How was the weather where you are??
