Weekly Menu Plan #23 – 2014

GFAlwaysMenuPlanlogoWe are starting to settle in to a schedule, though it seems like something is always rocking the boat!  Last week I had to spend several hours trying to wrangle a work permit for my oldest.  Those things cause your whole schedule to be off.  I’m always trying to juggle things around and keep all the balls in the air.  Do you feel the same way?

I have been enjoying the cool and low humidity mornings we’ve been having here in Georgia.  Fall is definitely in the air and I am really looking forward to cooler weather and all that goes with it.  I saw a great little project on Pinterest that I might try to do.  I think I have some of those cement borders laying around.  That might be nice for the cool nights that Fall is bringing.

I have several recipes that I’m looking forward to trying soon, pie cookies, Chocolate mousse cake and bread!  I haven’t made bread in months.  I have found a recipe for sourdough,  again.  I’m going to try again to make sourdough.  I used to make sourdough before GF.  My grandma and my great-great aunt Gwen always made it when I was growing up and I got my starter from my grandma years aog when I used to make it.  I tried once to make it GF, but it didn’t turn out.

Weekly Menu Plan #21 – 2014

We are starting school this week, we’ll ease in a bit.  I read a post recently from where she had said she was looking forward to school starting so she could get back into a schedule.  I hadn’t thought about it but I agree. The summer has been so busy and I too am looking forward to getting back into a schedule and a little less busyness.  Also, looking forward to some new adventures in schooling this year that will start in September.  Have you started school yet (homeschool or otherwise)?  What are you looking forward to this year?

Gluten Free Ice Cream Sandwiches

I have been craving an ice cream sandwich.  Well, being GF there is nothing even remotely similar to and ice cream sandwich, at least not that I know of.  I did find some GF Ice Cream Sandwiches and they were pretty good, but at $7 for 4, I’ve only purchased them about 3-4 times ever, I mean that’s not enough for everyone in my family to have one.  I have purchased them and not shared them, don’t judge.  🙂  Anyway, I decided to buy some store bought cookies and make my own.  I used these cookies, they turned out ok, but the cookie was hard and I was wanting soft.  Then I remembered a recipe I had converted and hadn’t used yet for  Chocolate Cookies for Ice Cream Sandwiches and decided to make some right then.  I used Bryer’s Natural Vanilla for the inside of the sandwich.

Ice cream of choice
Cookies (recipe follows)

 

1 cup butter, softened

3/4 cup cup white sugar

1 egg yolk

1 teaspoon vanilla

2 1/4 cup GF white flour

3/4 teaspoon xanthan gum

1/4 cup unsweeteened cocoa powder

1/4 teaspoon ground cinnamon (optional)

pinch salt

 

 

Yield about 30 – 2 1/2 inch cookies

Cream butter and sugar.

Add egg yolk and vanilla, mix well.

In a separate bowl mix together the dry ingredients and add to the butter mixture.  Mix until it comes together.  Divide the dough into two parts and form flat disk out of them.  Wrap in plastic wrap and chill 30-60 minutes. OR if you’re in a big hurry, like I was, you can scoop them into balls, roll them in sugar and flatten with a bowl dipped in sugar.

Preheat oven to 375 degrees

Roll out one disk between two sheets of well floured (GF) parchment papers.  Maybe 1/4 inch thick.  Bake on parchment paper 10-12 minutes.  Cool on cookie sheets or 5 minutes then move to cooling rack.

Let the ice cream soften, just a bit.  Scoop and place on one cookie, top with another cookie and lightly press down.  Wrap each sandwich in wax paper and freeze.

Weekly Menu Plan #20 – 2014

GFAlwaysMenuPlanlogoLast week was one of the busiest weeks I have had all year.  I am looking forward to being at home a little more this week.  I did get a lot accomplished though, and for that I am glad.  I got to meet with some ladies to hear about a Charlotte Mason Co-op and I am really looking forward to doing that this coming year with my three younger kids.  My oldest got his first official job offer and if all goes well we’ll go in to finalize it on Monday.  I went to see my grandma, who is looking fabulous, after a fall a few weeks back. Took two of four kids to dentist.  Had a kid with an eye ache, which I think may have been a migraine after talking with a few people and a trip to the eye doctor. Got to see a much missed friend from out of town.  Had tea with some lovely ladies from church. Spent a little time with a friend I haven’t seen for quite some time.  So, though it was extremely busy and hectic, all in all, it was a good week.  Oh, and I also made some semi-homemade ice cream sandwiches.  Here’s a sneak peek at them.
